How should one respond when hurt by others?

This is something difficult to do but it's a fantastic characteristic and it shows the softness of one's heart that you're able to forgive others. Now the key point here as I always mention the hadith in Sahih Bukhari: وَاغْفِرُوا يَغْفِرُوا اللَّهُ لَكُمْ. Allah says forgive others and Allah will forgive you. Have that as your intention that you are forgiving somebody else for their wrongs towards you with the intention that Allah forgives you and this is the most important thing no matter what happens in this life.
