So being from the people of the book means that you know for sure that the butcher who slaughtered that animal is from the people of the book, meaning the Christian or Jewish faith, and they slaughtered it in a certain manner as such. Here in the UK, with a high population of people who are different faiths or may have no faith, for example, those that are atheists, you cannot be sure 100% who it was that slaughtered that animal.
