A wali specifically must be somebody of the Muslim faith, so your father wouldn't be able to be your wali. Specifically, to keep things simple, I would say the easiest thing to do would be to contact the imam or the scholar who's doing the nikah and to let them know so that they're able to organize an individual who would then be suitable to be your wali for the nikah.
